    Gastronomy in Sri Lanka

    In a land rich in bio-diversity, the Singhalese diet is full of traditional ingredients: rice, lentils, vegetables, banana, plantain, tropical fruits, yams and spices. 

    The Singhalese prepare innumerable curries, delicately flavoured with lime and spices such as saffron, chillies and the indigenous cinnamon and cloves. The creamy texture comes from the coconut juice that is expressed from pulped coconut flesh. The customary ‘Sri Lankan rice and curry’ features on the menu everywhere in Sri Lanka, though the contents of each of the 5 - 9 dishes may vary considerably depending on the season, region and what fresh produce is available. In the dry zone, for example, Murunga leaves are added to curry, especially prawns, to minimise cholesterol. Buffaloes provide a plentiful supply of curd. As Sri Lanka has a vast coastline, fish also plays a major part on the coast. The multi-cultural influences bring an array of mouth-watering dishes such as Jaffna Tamil crab curry, Muslim biryani, Burgher lamprais and Malay watalappam, which is a steamed dessert. Asian fusion cuisine is in vogue in the luxury hotels, where chefs create innovative dishes drawing on their experience working abroad, and it is invariably delicious. In the restaurants and hotels that cater for tourists, meals tend not to be as ‘hot’ and you will also find international dishes on the menu, though it may not always turn out to be what the name of the dish might imply!

    Sri Lankan Cookery Demonstrations
    Gastronomy enthusiasts will love the distinctive flavours, combinations and contrasts of Sri Lankan cuisine and the chefs are often willing to show their guests how it is done. The following culinary experiences are available at extra cost and by prior arrangement.

    Learn to cook hot and spicy sea food dishes and other Sri Lankan specialities with the team of chefs at Jetwing Beach Hotel. You can visit the local fish markets in Negombo with the chef and select your own fish.
    Aditya Resort’s Sri Lankan cookery demonstration begins with a morning tour to the local fish market with the hotel’s chef, who will show you how to pick the freshest and best quality fish. Then you will return to the Aditya kitchen where the Chef will introduce the art of exotic Sri Lankan cookery familiarising you with the ingredients, spices and cooking methods. He will demonstrate how to prepare a typical Sri Lankan lunch menu consisting of fish, prawns, lentils, vegetable curries, sambol & rice, which then will be served at table for you to enjoy a delicious Sri Lankan rice and curry lunch.
    The acclaimed chefs at Amanwella take pride in sharing their culinary skills and offer interested guests a special experience by taking them to a fish market in the local town, advising you on your fish selection and demonstrating how to cook it back at the hotel. Guests not only get to taste the succulent creation but also keep the recipe to try at home.
    Dine with the chef at Heritance Kandalama - Ever wondered about the exotic ingredients that go into the delectable delights you enjoy? Why not ask the master chef yourself! Heritance Kandalama offers you the unique experience of dining with their master Chef inside the state-of-the-art kitchen. You can enjoy your meal amidst the busy activity of the kitchen and tittle-tattle with the Chef, learning things about your food and its preparation that you never knew about.
    The expert chefs at Kahanda Kanda will willingly share their expertise with guests and cookery classes are available on request - for instance, how to cook string hoppers and egg hoppers for breakfast. The emphasis is on fresh fusion cuisine and holistic health.

    Culinary Delights
    The enthusiastic and imaginative staff at Jetwing Warwick Gardens make full use of the fresh, organic foods that they produce on the estate and are more than willing to share recipes and culinary techniques. Culinary experiences range from a romantic Garden BBQ for a couple or small group, a typical English breakfast in bed or on the lawn with fresh eggs from the farm. Fresh salads are made from the produce of the garden and the milk is fresh from Daisy, the bungalow cow. Make sure you try the fresh guava jam – delicious.
    A gourmet extravaganza awaits you at Ceylon Tea Trails. Four exquisitely presented meals of mouth-watering dishes flow seamlessly through your day, leaving you contentedly satiated yet surprisingly unstuffed. A note for the adventurous palate - the Executive Chef has made quite a name for himself, especially for his ground-breaking tea-infused dishes. Afternoon cream tea is served on the lawn in fine weather and the tea menu reads like a wine list - ‘dark golden brown, medium bodied, grown on sun-facing steep slopes’- rightly treating each tea with the reverence of a vintage wine. The chef discusses all meals and mealtimes individually with guests and you can enjoy your meal in the dining room or garden terrace or in the privacy of your own room, as you wish.
    At Serene Pavilions the culinary experience is exquisite, creative and highly personal. Have the chef cook your meal in front of your eyes in the privacy of your own private Pavilion dining room or at sunset on your pool deck. The breakfasts are also to die for… à la carte… waffles, fish curries, milk rice, freshly baked breads and pastries…try something new each day for a week, served by your personal butler in your pavilion, poolside or at the Amritha restaurant terrace.
    Ellerton uses organic, home-grown, produce whenever possible and the entire 50 acres of grounds are organically maintained.
    The famous Sun House curry involves 9 vegetable curries. The ingredients depend on the season but here is a flavour: parrippu (dhal) curry, cashew nut curry, green mango curry, lotus root curry, banana blossom curry, Sri Lankan curd & treacle. The vegetables are often from their own vegetable garden.
    When in the Kandy area, take a trip to Matale to learn more about Sri Lankan cooking and spices at the Aluvihara Kitchen and visit a spice farm.
    As with all Jetwing Hotels, at Jetwing Vil Uyana great emphasis is put on providing guests with healthy as well as succulent cuisine. Heart-healthy alternatives are provided at buffets and in à la Carte menus; herbal porridges, fresh fruit and traditional, healthy, Sri Lankan meals are always featured. Wherever possible, the hotel serves organically grown vegetables from the hotel garden.
